Russian Retailer Launches Robot-Powered Bakeries

The Monетка grocery chain has introduced automated bakery-cafés in 30 stores, where computer vision and AI manage production from dough prep to display shelves.

The Russian retail chain Monетка has rolled out automated bakery-cafés, starting with 30 stores in the Sverdlovsk region. The project is powered by the “Smart Baker” digital system, which fully manages production. It analyzes real-time sales and independently generates a daily baking plan. Tasks are automatically sent to employees’ tablets.

Computer vision cameras continuously monitor shelf stock and count the number of dough pieces loaded into the oven. This allows production to be flexibly adjusted. A coffee corner complements the bakery service.

According to Irina Smirnova, the chain’s director, the complex model is being tested to ensure customers have access to fresh, hot products at any time of the day.

A decision on scaling the technology across the entire chain will be made at the end of 2025. The trend toward retail automation and data-driven business optimization is clearly gaining momentum in Russia.
