In Russia, Software Developed to Design Dietetic Foods

The technology helps select ingredients for producing foods that can be recommended to people with a range of medical conditions.

Scientists at South Ural State University have developed a software tool designed to support the creation of specialized dietary products.

According to the university’s press service, the technology can quickly identify the correct enzymes needed to break down each type of milk protein.

“The challenge was that finding the right enzymes for breaking down each type of milk protein is a complex and time-consuming process. Using a vast body of existing data, we created a more compact information base and developed a dedicated search application that works offline in conjunction with this new database,” said Ilya Chanov, a postgraduate researcher at the university’s Department of Food and Biotechnology.

Without Extra Costs or Trial and Error

The program instantly suggests the required enzyme, simplifying the protein breakdown process for scientists and manufacturers. This helps address the issue of import substitution in dietetic foods intended for people with diabetes, cardiovascular disease, and hypertension.

The software may also be useful for developing new technologies in the protein hydrolysates market.
