AI Is Cooking Up Experimental Menus for Moscow’s Restaurants

Neural networks are stepping into Russia’s kitchens, generating entire tasting menus and cocktails — but chefs still have the final say.

Moscow’s restaurants and bars are testing a bold new ingredient in their kitchens: artificial intelligence. Chefs Andrey Fedoseev and Vladimir Molchanov recently tapped neural networks to design a Nordic-style tasting menu, according to Komsomolskaya Pravda. The algorithms generated seven detailed dishes — complete with recipes and visual mock-ups — ranging from “Ocean Delight with Crispy Seaweed” to “Charm on the Shore of a Northern Lake.” The chefs kept most of the AI’s ideas intact, making only minor tweaks to adapt the recipes to locally available ingredients.

In another venue, AI crafted three unconventional cocktails, including a “Herbal Martini” with rosemary syrup and a “Halva Martini” with tahini. Industry insiders predict that within a few years, neural networks will become standard creative partners for restaurateurs, helping with everything from concept generation to process optimization. But for now, humans still call the shots — with AI serving as a powerful tool to expand their culinary imagination.
